3 cups of granulated tapioca flour
1½ cups of warm water
1½ cups of coconut milk
1 cup of crystal or refined sugar

1 coffee spoon of salt
sugar and cinnamon to sprinkle
frying oil
How to make Tapioca Student Cupcake:
The first step of this step-by-step student muffin recipe is to mix the first 6 ingredients in a bowl. The result will be a soft mixture that should rest for 30-40 minutes for the tapioca to absorb the liquids.
Tip: If using dry grated coconut, hydrate for 1-2 minutes with a little filtered water.
After this time, take portions of the dough and shape them into medium-sized kebabs or croquettes.
Heat the oil and fry the student muffins until golden. Remove to absorbent paper to allow them to dry a little, then dip into a bowl with the sugar and cinnamon mixed together.
