Goiás pie recipe

Empadão Goiás (formerly called "Empadão Goiana") is a typical salty pie from the state of Goiás, which can be filled in various ways. The most characteristic feature of this pie is its shape and size: the dough is placed in individual molds with 14 or 15 centimeters in diameter, 20 centimeters being the most common. Ingredients to make pies from Goiás:

For mass:

 3 cups of wheat flour (420 grams)

 ½ cup margarine or unsalted butter

 ½ cup of milk (120 milliliters)

 ½ cup of oil (120 milliliters)

 2 yolk units

 1 tablespoon of baking powder

 1 teaspoon of salt

For the filling:

 1 cooked and shredded chicken breast

 1 unit of chopped medium onion

 2 pieces of chopped tomatoes without seeds or skin

 ½ box of sour cream

 3 tablespoons of olive oil

 2 tablespoons of cream cheese

 300 grams of grated mozzarella

 1 chicken broth tablet

 green smell to taste

 Black pepper

 salt

How to make Pie in Goiás:

To make this Goiana chicken pie, start by preparing the stuffing: place a frying pan with the oil over medium heat, and saute the onion there. When it is transparent, add the tomatoes and the broth tablet, stir and cook until the tomatoes wilt.

The ingredients to add next are meat and the green smell. Mix and lightly fry the meat. Then turn off the heat, add the cream cheese and cream, mix everything and season to taste with salt and pepper. Let cool.

While the filling cools, prepare the pie dough: in a large bowl mix all the ingredients (reserve one of the yolks to brush the dough at the end) with your hands, for a few minutes, until it does not stick.

Tip: If the dough takes a long time to come off, add a little more flour.

Then form a ball with the dough and divide in two, one of which must correspond to 1/3 of the amount of the initial ball. Roll out the larger ball with a rolling pin, cut into circles and line the molds with it, leaving some dough left over, as in the photo.

Also open the smaller ball of dough and cut into circles, which will match the lid of the chicken pies.

When the filling is cold, mix it with the grated mozzarella. Fill the pies and cover with the dough circles, closing the edges well with the dough. Brush with the reserved yolk (you can also sprinkle some cheese and oregano).

Tip: At this stage you can also add to the filling other ingredients that do not need to be fired, such as corn, olives, etc.

Bake in a preheated oven at 200ºC until the dough is golden. Remove, let cool and enjoy this homemade Goiano pie recipe. Enjoy your food!
